LEMON CHEESE

Ingredients:

Instructions:

  1. Place butter and sugar in a double boiler and melt together.
  2. Add the lemon juice and rind.
  3. Stir in the well-beaten eggs.
  4. Cook and stir until the mixture thickens. (It will thicken more as it cools.)
  5. Serve on crackers or with molded salads.
