CREAM OF POTATO SOUP

Instructions:

  1. Place potatoes and onions in a 3-quart saucepan and barely cover with cold water.
  2. Add salt, cover, and bring to a boil. Reduce heat and simmer for 10 minutes or until potatoes are tender.
  3. Mash potatoes in their liquid.
  4. Add butter and evaporated milk. Add water if the soup is too thick.
  5. Reheat to scalding, then remove from heat.
  6. Stir in chopped parsley before serving.
