TOMATOES AND CORN WITH HERBS

Instructions:

  1. Heat oil and butter in a large skillet. Cook scallions and garlic for 5 minutes.
  2. Add tomatoes, salt, thyme, tarragon, 2 tbsp parsley, and bay leaf. Bring to a boil, then simmer for 5–6 minutes.
  3. Stir in corn. Cover and cook for 10–15 minutes.
  4. Stir in the remaining parsley before serving.
