NEW ORLEANS SHRIMP AND CRABMEAT GUMBO

Instructions:

  1. Fry bacon until crisp. Break into bits and set aside.
  2. Add butter to the bacon fat and sauté onions, garlic, peppers, and celery for 10 minutes.
  3. Add tomatoes, tomato juice, salt, and pepper. Cover and simmer for 30 minutes.
  4. Toss in shrimp and crabmeat. Simmer for an additional 10 minutes.
  5. Serve over rice and garnish with bacon bits.
