FRUITED HAM AND CHEESE PILAF

  1. Preheat oven to 350°F. Drain orange sections and reserve 1/3 cup of the liquid.
  2. In a 1-quart casserole, combine fruit, reserved liquid, butter, celery, rice, and cinnamon. Bake covered for 25 minutes, stirring once, until the rice is tender.
  3. Roll up each slice of ham with a slice of cheese inside and cut in half crosswise.
  4. Place the ham and cheese rolls atop the hot rice mixture. Bake covered for 5 minutes until the rolls are heated through.
  5. Let stand covered for 1 minute before serving. Garnish with celery leaves if desired.
