1/2 (11 oz) can mandarin orange sections with pineapple
1 tsp butter
1/3 cup finely chopped celery
1/3 cup quick-cooking rice
1/8 tsp ground cinnamon
2 (1 oz) slices Swiss cheese
2 (1 oz) slices fully cooked ham
Instructions:
Preheat oven to 350°F. Drain orange sections and reserve 1/3 cup of the liquid.
In a 1-quart casserole, combine fruit, reserved liquid, butter, celery, rice, and cinnamon. Bake covered for 25 minutes, stirring once, until the rice is tender.
Roll up each slice of ham with a slice of cheese inside and cut in half crosswise.
Place the ham and cheese rolls atop the hot rice mixture. Bake covered for 5 minutes until the rolls are heated through.
Let stand covered for 1 minute before serving. Garnish with celery leaves if desired.
