Instructions:

  1. Stir sugar and oil together in a bowl. Add eggs, one at a time, mixing well.
  2. Mix in grated zucchini.
  3. Fold in flour, baking soda, baking powder, salt, and cinnamon.
  4. Stir in coconut, nuts, and pineapple (if using).
  5. Pour batter into 3 greased and floured loaf pans or 10 mini loaf pans.
  6. Bake at 350°F for 45 minutes to 1 hour.
