INDIVIDUAL CHEESECAKES

  1. Preheat oven to 350°F.
  2. Beat cream cheese, lemon juice, vanilla, sugar, and eggs for 3–4 minutes until smooth.
  3. Line tart pans with midget-sized cupcake paper cups. Place a vanilla wafer or 1 teaspoon wafer crumbs in the bottom of each cup.
  4. Pour 1–2 tablespoons of the mixture into each cup.
  5. Bake for 12–15 minutes. Cool and top with 1 teaspoon of cherry pie filling or other desired topping.
