TEXAS LEMON PECAN CAKE

Instructions:

  1. Preheat oven to 250°F. Heavily grease and flour a tube cake pan.
  2. Cream sugar and oleo. Add egg yolks and mix well.
  3. Combine dry ingredients and add to the mixture alternately with milk.
  4. Stir in lemon extract, nuts, and fruit.
  5. Fold in beaten egg whites. Pour into the prepared pan.
  6. Place a pan of water in the oven while baking for 2 1/2 hours.
