REFRIGERATOR CAKE

Ingredients:

• 1 yellow cake mix
• ½ cup cooking oil
• 4 eggs
• 1 (11 oz.) can mandarin oranges, including juice

Filling:

• 1 (20 oz.) can crushed pineapple, including juice
• 10 oz. Cool Whip (adjust if needed)
• 1 (5 oz.) box vanilla instant pudding

Instructions:

1. Preheat the oven to 350°F.
2. Beat together the cake mix, cooking oil, eggs, and mandarin oranges with their juice.
3. Divide the batter evenly among 3 greased cake pans.
4. Bake until a toothpick inserted in the center comes out clean. Cool completely.
5. For the filling, combine pineapple (with juice), Cool Whip, and pudding mix. Beat until smooth.
6. Layer and ice the cake with the filling.
7. Refrigerate. Cake can also be frozen.
