  1. Preheat the oven to 350°F. Grease and flour a 9-inch tube pan.
  2. Combine sausage and sugars in a mixing bowl; mix until well blended. Add eggs and stir.
  3. Sift together flour, ginger, baking powder, and pumpkin pie spice.
  4. Stir baking soda into coffee. Alternately add flour mixture and coffee to the batter, mixing well after each addition.
  5. Soak raisins in boiling water for 5 minutes. Drain and dry. Fold raisins and walnuts into the batter.
  6. Pour the batter into the prepared pan. Bake for 1½ hours.
  7. Store in the refrigerator; keeps indefinitely.
