  1. Preheat the oven to 375°F. Line cupcake tins with liners and place a vanilla cookie at the bottom of each.
  2. Beat cream cheese, sugar, vanilla, and eggs until creamy.
  3. Fill each liner ¾ full with the mixture.
  4. Bake for 15 minutes.
  5. Top with cherry topping. Makes 18 large cupcakes.
