ALMOND MOCHA FILLING

Instructions:

  1. In a small bowl, cream butter or margarine and 3/4 cup confectioners' sugar until fluffy.
  2. Beat in egg yolk and almond extract; set aside.
  3. Mix cocoa, coffee, and water until dissolved.
  4. Beat into the creamed mixture until well blended.
  5. Fold in almonds.
  6. Spread filling on the bottoms of cookies. Top with another cookie.
  7. Store in a cool place or refrigerator.
