APPLE SQUARES

Instructions:

  1. Combine flour, sugar, and salt; cut in shortening until the mixture resembles coarse meal.
  2. Mix egg yolk with water; add to flour mixture and form into a ball.
  3. Divide dough in half and roll each half into a 16x11-inch rectangle.
  4. Place one rectangle in a lightly greased 10x15-inch jelly roll pan. Sprinkle with cornflake crumbs.
  5. Arrange apples over crumbs and sprinkle with cinnamon sugar mixture.
  6. Brush edges of pastry with water and cover with the second rectangle. Pinch edges to seal.
  7. Beat egg white until peaks form and brush over pastry.
  8. Bake at 400°F for 40 minutes.
  9. Combine powdered sugar and lemon juice for icing and drizzle over hot pastry. Cool and cut into squares.
