HEAVENLY HALO MOLD

Ingredients:

• 1 (1 lb. 4 oz.) can crushed pineapple, drained (reserve 1 cup syrup)
• 2 (3 oz.) packages lemon gelatin
• 3 cups miniature marshmallows
• 2 1/6 cups boiling water
• 1 cup heavy cream, whipped
• 1 loaf angel food cake, cut into 1/2-inch cubes

Instructions:

1. Dissolve gelatin and marshmallows in boiling water. Add reserved pineapple syrup. Chill until almost thickened.
2. Whip the mixture and fold in pineapple, whipped cream, and cake cubes.
3. Pour into a 10-inch tube pan or 3-quart ring mold. Chill until firm.
