RED PEPPER JAM

Instructions:

  1. Grind peppers and sprinkle with a small amount of salt. Let sit for 3 hours.
  2. Combine peppers with sugar, vinegar, and additional salt to taste.
  3. Cook slowly for 1 1/2 to 2 hours, until thick and bright red (do not overcook to dark red).
  4. Transfer to small jars and refrigerate. Keeps for up to 1 year.
  5. Serving suggestion: Serve on crackers or with cottage cheese as an appetizer.
