MICROWAVE MEATLOAF

Ingredients:

• 1 1/2 lb. ground beef
• 2 cups soft bread cubes
• 1/2 cup celery, finely chopped
• 1/2 cup chopped onion
• 1/4 cup chopped green pepper
• 1 1/2 teaspoons salt
• 1 egg
• 1/2 cup catsup

Glaze:

• 1/2 cup catsup
• 1/4 cup chili sauce
• 2 tablespoons brown sugar
• 1 tablespoon lemon juice
• 1 teaspoon dry mustard
• 1 teaspoon Worcestershire sauce

Instructions:

1. Combine all meatloaf ingredients in a medium mixing bowl. Mix well and press evenly into a 9x5-inch glass loaf dish.
2. Brush with glaze mixture or plain catsup/barbecue sauce.
3. Microwave on ROAST setting for 20–30 minutes, or until the center reaches 140°F. Pour off liquid and let stand, covered, for 5 minutes before serving.
