HOMEMADE NOODLES

Instructions:

  1. Beat egg yolks and whole egg until very light. Mix in water and salt. Stir in flour and knead into a stiff dough.
  2. Divide dough into 3 parts and roll each piece paper-thin on a lightly floured surface.
  3. Let dough dry partially, then roll it up like a jelly roll. Slice into thin strips of desired width and length. Shake out strips to separate.
  4. Allow noodles to dry completely or freeze for later use.
