MEXICAN PIE

  1. Preheat oven to 400°F. Grease a 10-inch pie plate or 9-inch cake pan.
  2. Cook and stir ground beef and onion in a skillet until beef is browned. Drain excess fat. Stir in taco seasoning mix.
  3. Spread the beef mixture into the prepared pan. Sprinkle with chilies and cheese.
  4. In a blender or with a hand mixer, blend the milk, eggs, red pepper sauce, and baking mix for 15 seconds.
  5. Pour the mixture over the beef.
  6. Bake for 25–30 minutes or until golden brown and a knife inserted into the center comes out clean. Let stand for 5 minutes before cutting.
  7. Serve topped with chopped lettuce and tomato. Serves 6–8.
