POTATO CAKES

  1. Preheat oven to 450°F.
  2. In a bowl, mix flour, salt, and baking powder. Add butter and work it in with your fingers.
  3. Add milk and mashed potatoes, mixing to form a dough.
  4. Shape into cakes and mark with a deep cross into quarters without cutting through.
  5. Bake for 15–20 minutes or until light brown. Serve hot with butter.
