BRANDIED BEEF

  1. In advance, combine ground beef with bread crumbs, salt, pepper, onion, and egg, mixing lightly.
  2. Form into 36 balls and place on a greased baking pan.
  3. Bake at 400 degrees for 15 minutes.
  4. Sprinkle with paprika.
  5. For the sauce:
  6. 5. At serving time, in the blazer pan, combine all sauce ingredients except brandy.
  7. 6. Cook over low heat, stirring constantly until slightly thickened.
  8. 7. Add brandy and place over boiling water in a water pan.
  9. 8. Add meatballs and heat, stirring occasionally.
  10. 9. Serve with picks and tuck some sprigs of celery around the edge of the pan.
