APPLE ROLLS

Instructions:

  1. Stir together apples, nuts, and sugar. Let stand, stirring often, until juicy (about 1 hour).
  2. In a separate bowl, stir together flour, baking soda, salt, and spices.
  3. Add apple mixture and stir well. Stir in melted butter and vanilla, then add eggs.
  4. Turn into 2 greased and floured tall 1 lb coffee cans. Tie a 2-inch wide band of double foil around the top of each can as a collar.
  5. Bake in a preheated 325°F oven for 1 hour and 15 minutes, or until a tester comes out clean.
  6. Cool on a wire rack for 10 minutes. Remove the foil and turn out. Serve warm with pudding sauce or cold as a cake or tea bread.
