SHORT RIBS CASSEROLE

Instructions:

  1. Preheat oven to 350°F.
  2. Cut the short ribs into individual squares and coat with flour.
  3. Brown the short ribs slowly on all sides in lard for 20-30 minutes.
  4. Remove ribs to a casserole dish. Add seasonings and 1/2 cup water.
  5. Cover and bake for 2 hours.
  6. Add onions, carrots, potatoes, and green pepper to the dish. If needed, add 1/4-1/2 cup water. Season vegetables with salt.
  7. Cover tightly and bake for an additional 1 - 1 1/2 hours.
  8. Thicken the gravy with 1 Tbsp. flour mixed with 1/2 cup water.
