ITALIAN STUFFED FILET MIGNON

Instructions:

  1. Pound filet mignon slices to 1/4 inch thick.
  2. Place ham, cheese, 1/4 hard-boiled egg, parsley, and a pinch of hot pepper on each slice.
  3. Roll up, secure with toothpicks, and sauté in olive oil with mashed garlic for 2 minutes per side. Drain.
  4. Pour quick Italian tomato sauce over the rolls. Cover and simmer for 2 minutes.
  5. Quick Italian Tomato Sauce:
  6. Sauté onion in hot oil until tender. Add garlic, carrots, and parsley; cook for 3 minutes.
  7. Stir in tomato sauce, basil, and beef broth. Simmer for 15 minutes.
