Instructions:

  1. Preheat the oven to 350°F.
  2. Salt and pepper the roast to taste.
  3. Place the roast in a baking dish with the onions and tomatoes.
  4. Bake at 350°F until the roast is tender.
  5. In the last 10 minutes of cooking, add the sliced olives with their juice.
