VEAL CORDON BLEU

Instructions:

  1. Preheat oven to 350°F.
  2. Pound the veal until 1/4 inch thick. Cut into 4 pieces.
  3. Place a slice of ham and cheese on each veal piece. Roll up and secure with wooden picks.
  4. Mix flour, salt, pepper, and allspice. Coat the rolls in flour, then dip in beaten egg and coat with bread crumbs.
  5. Brown the rolls in shortening for 5 minutes.
  6. Reduce heat, add water, cover, and simmer for 45 minutes until tender.
  7. Remove cover for the last 2-3 minutes to crisp the rolls slightly.
  8. Serve on a bed of rice with a green salad and chilled white wine.
