  3. Stir in ham, eggs, and parsley. Mix thoroughly.
  4. Shape mixture into tennis ball-sized dumplings.
  5. Simmer dumplings in beef broth for 1 hour.
  6. Serve in broth with Parmesan cheese or alongside sauerkraut if desired.
