STUFFED CROWN ROAST OF PORK

  1. Preheat the oven to 325°F.
  2. Season the roast with salt and pepper. Place it bone side up in a roasting pan, wrapping the bone ends in foil.
  3. Place an ovenproof bowl in the center of the crown to hold its shape. Insert a meat thermometer into the thickest part of the roast.
  4. Roast for 30-35 minutes per pound, or until the thermometer reads 170°F.
  5. One hour before done, remove the bowl and fill the crown with stuffing. Cover stuffing with foil for 30 minutes.
  6. Remove foil from the bone ends and garnish with crab apples or paper frills before serving.
