  1. In a skillet, sauté the peppers and onion in shortening until tender. Drain fat.
  2. In a bowl, blend the tomato paste and peanut butter. Stir in chicken broth and seasonings.
  3. Add the broth mixture and chicken to the skillet. Cook over low heat until heated through.
  4. Serve over rice.
  5. Makes 8 servings.
