STEWED CHICKEN AND DUMPLINGS

Instructions:

  1. Soak chicken in cold salted water for 1 hour.
  2. Place chicken in a pot, add water to cover by 2-3 inches, and simmer until tender. Remove chicken, reserving ¾ cup broth to cool. Let remaining broth simmer.
  3. Mix flour, salt, and baking powder in a bowl. Add eggs and cooled broth. Mix well.
  4. Roll dough to ¼ inch thick and cut into 1½ inch squares. Drop into simmering broth. Boil for 5 minutes, then simmer for 15 minutes.
  5. Return chicken to the pot. Remove from heat and let stand 10 minutes before serving.
