  1. Preheat the oven to 350°F.
  2. Melt the butter in a large saucepan. Add the chicken and brown lightly, stirring frequently.
  3. Stir in the onion, seasoning mix, tomato sauce, and water. Bring to a boil, then reduce heat.
  4. Cover and simmer for 15 minutes, stirring frequently.
  5. Remove from heat and stir in the corn, mushrooms, half of the cheese, and olives.
  6. Sprinkle with crushed corn chips.
  7. Bake for 30 minutes.
  8. Serve hot.
