CORNISH HENS

  1. Preheat the oven to 325°F.
  2. Lightly season the cavity of each hen with salt.
  3. Melt ¼ cup butter in a skillet and sauté the mushrooms, onion, and green pepper.
  4. Add wild rice, white rice, pineapple, salt, and pepper. Toss lightly to combine.
  5. Stuff each hen with the rice mixture and secure the opening with skewers or wooden picks.
  6. Place the hens breast-side up on a rack in a roasting pan.
  7. Brush the hens with the remaining butter.
  8. Bake uncovered for 1 hour. Cover and bake for another hour until tender.
