APRICOT PECAN RICE STUFFING

  1. Pour boiling chicken broth over apricots; set aside.
  2. Sauté onions and celery in butter until tender-crisp.
  3. Add rice, pecans, seasonings, apricots, and broth. Mix well.
  4. Use to stuff turkey, duck, or pork chops. Roast immediately or bake in a 325°F oven for 25-30 minutes. Makes 6 cups.
