  1. Cut the fish into serving pieces.
  2. In a bowl, sift together the flour, baking powder, and salt.
  3. Add the egg yolk, water, and melted fat; mix well. Fold in the beaten egg white.
  4. Dry the fish pieces and dip them into the batter.
  5. Heat shortening to 365°F and fry the fish for 4-6 minutes or until golden brown.
  6. Drain on absorbent paper.
