PICKLED BEETS

Ingredients:

Instructions:

  1. Wash beets, leaving on roots and 1 inch of tops.
  2. Cover beets with boiling water and simmer, covered, for 25 minutes. Drain.
  3. Slip off skins, trim beets, and cut into quarters.
  4. In a large kettle, combine sugar, water, and vinegar. Tie pickling spices in a cheesecloth bag and add to the kettle.
  5. Bring to a boil; add beets and simmer for 10 minutes.
  6. Pack hot beets into clean, hot pint jars, leaving ½ inch headspace. Adjust lids.
  7. Process in boiling water for 30 minutes (start timing after water boils).
  8. Makes 3 pints.
