  1. Cover turkey carcass with water and cook at a low boil for approximately 1½ hours.
  2. Remove from heat and cool to a temperature suitable for handling.
  3. Remove meat from bones and return it to the broth.
  4. Add cubed celery and onion.
  5. Season with salt and pepper to taste. Simmer for another 1½ hours.
