Instructions:

  1. In a large, shallow baking dish, blend Italian dressing with cheese; add vegetables except carrot strips.
  2. Cover and marinate in the refrigerator, turning occasionally, for 4 hours or overnight.
  3. On 6-inch wooden skewers, alternately thread vegetables and carrot strips.
  4. Brush with remaining marinade before serving.
