OIL VINEGAR BLUE CHEESE DRESSING

Ingredients:

• 1/2 cup light vinegar
• 1 1/2 cups salad oil
• 1 tsp. salt
• 1 1/2 tsp. sugar
• 1 cup crumbled Blue cheese (5 oz.)

Instructions:

1. Place all ingredients except 1/2 cup cheese in an electric blender or jar with a tight lid.
2. Blend until the mixture is emulsified (about 1 1/2 minutes).
3. Stir in the remaining Blue cheese so it will be lumpy.
