BANANA PUDDING CAKE

  1. Slice bananas into a large mixing bowl and beat until well mashed.
  2. Add remaining ingredients and blend.
  3. Beat at medium speed of electric mixer for 2 minutes.
  4. Pour into a well-greased and floured 10-inch tube pan or Bundt pan.
  5. Bake at 350 degrees for 60–70 minutes.
  6. Cool in the pan for at least 15 minutes. Remove from the pan and finish cooling on a rack.
  7. Sprinkle with confectioners' sugar if desired.
