BUTTERSCOTCH BONANZA

  1. In a small bowl, blend all filling ingredients.
  2. Beat at the highest speed until smooth and creamy. Set aside.

  5. 1 pkg. Pillsbury Plus yellow cake mix
  6. 1 tsp. cinnamon
  7. 1/4 tsp. salt
  8. 1/2 cup applesauce
  9. 1/2 cup margarine or butter, softened
  10. 2 egg yolks (reserve whites)
  11. 1 cup applesauce
  12. 1/3 cup oil
  13. 3 eggs
  14. Instructions:
  15. In a large bowl, blend cake mix, water, oil, and eggs until moistened.
  16. Beat for 2 minutes at the highest speed.
  17. Pour batter over filling in the pan, spreading to cover.
  18. Baking:
  19. Bake at 350 degrees for 35–45 minutes or until a toothpick inserted in the center comes out clean.
  20. Immediately invert pans onto cooling racks. Cool layers for 10 minutes before removing waxed paper.
  21. Cool completely.
  22. Assembly:
  23. Place layers, filling sides together, on a serving plate.
  24. In a small bowl, blend frosting ingredients until moistened.
  25. Beat at the highest speed until peaks form (about 5 minutes).
  26. Frost sides and top of the cake. Store in refrigerator.
