CAKEY CHEESECAKE

Ingredients:

• 18–19 oz. pkg. white cake mix, divided
• 2 Tbsp. salad oil
• 2 (8 oz.) pkg. cream cheese, softened
• 1/2 cup granulated sugar
• 4 eggs, divided
• 1 1/2 cups milk
• 2 Tbsp. lemon juice
• 1/4 tsp. almond extract
• 1/4 tsp. vanilla extract
• 21 oz. can cherry pie filling

Instructions:

1. Preheat oven to 350 degrees, then reduce to 300 degrees when baking the cake.
2. Reserve 1 cup dry cake mix.
3. Mix the remaining cake mix, oil, and 1 egg to make crumbs; press crumbs into the bottom and sides of an ungreased 9 x 13-inch pan to form a crust.
4. Blend cream cheese, sugar, remaining 3 eggs, and reserved 1 cup cake mix; beat 1 minute at medium speed.
5. Slowly stir in milk, lemon juice, almond, and vanilla extracts. Blend well, then pour into the prepared crust.
6. Bake at 300 degrees for 45–55 minutes.
7. Cool, then top with canned cherry pie filling. Yields 1 cake.
