CHEESECAKE MINIATURES

Ingredients:

• 2 dozen vanilla wafers
• 2 (8 oz.) cream cheese
• 3/4 cup sugar
• 1 Tbsp. lemon juice
• 1 tsp. vanilla
• 2 eggs

Instructions:

1. Prepare muffin pans by placing a paper liner in each and add a vanilla wafer to each.
2. Soften cream cheese and mix in sugar, lemon juice, vanilla, and eggs.
3. Mix well and spoon into liners.
4. Bake at 375 degrees for 15 minutes.
5. Top with 1 Tbsp. ready cherry pie filling or filling of your choice.
6. Refrigerate before serving.
