FRUIT COCKTAIL CAKE

Instructions:

  1. Preheat oven to 350 degrees.
  2. Cream together egg and sugar.
  3. Add sifted flour, baking soda, and salt. Blend in fruit cocktail and juice.
  4. Pour into a greased 9 x 9-inch pan.
  5. Bake for 30 minutes.
  6. Remove from oven and sprinkle 1/2 cup loosely packed brown sugar and 1/2 cup chopped nuts (or coconut) over the partially cooked cake.
  7. Return to oven and bake for an additional 15 minutes or until browned.
  8. Serve topped with whipped cream.
