COCONUT PECAN FILLING AND FROSTING

Instructions:

  1. Combine evaporated milk, sugar, egg yolks, butter or margarine, and vanilla in a saucepan.
  2. Cook over medium heat, stirring constantly, until the mixture thickens (about 12 minutes).
  3. Remove from heat and add coconut and pecans.
  4. Beat until cool and of spreading consistency.
  5. Makes enough frosting to cover the tops of 3 (8 or 9-inch) layers (about 2 1/2 cups).
