SNOWBALL CAKE

Instructions:

  1. Dissolve gelatin in 4 Tbsp. cold water, then add 1 cup boiling water. Combine with sugar, pineapple, juices, and salt. Chill until syrupy.
  2. Prepare 2 pkg. dessert topping according to package directions.
  3. Combine cake pieces with the gelatin mixture and pack firmly into a large mixing bowl lined with plastic wrap. Chill overnight.
  4. Prepare the remaining topping mix and frost the un-molded cake with it.
  5. Sprinkle with coconut and refrigerate.
