COFFEE NUT CRESCENTS

Instructions:

  1. Cream butter and gradually add sugar; beat until light and fluffy.
  2. Stir in vanilla.
  3. Combine flour, nuts, instant coffee, and salt; gradually stir into creamed mixture.
  4. Press dough into a ball, cover, and refrigerate for at least 1 hour.
  5. Preheat oven to 325 degrees. Shape rounded teaspoonfuls of dough into crescents and place 1 inch apart on buttered cookie sheets.
  6. Bake until set but not brown, about 25 minutes.
  7. While still warm, roll cookies first in confectioners' sugar, then granulated sugar, and again in confectioners' sugar.
  8. Cool completely on wire racks and store in tightly covered containers.
  9. Yield: Approximately 5 dozen.
