APPLE SNOW

Ingredients:

• Pulp of 3 large or 4 medium baked apples
• 3 egg whites
• 3/4 cup sugar (or less if apples are not tart)
• 1 tsp. vanilla

Custard:

• 1/2 pint milk
• 3 egg yolks
• 1/2 tsp. vanilla

Instructions:

1. Bake apples with cores in and skins on. Cool and remove pulp.
2. Beat egg whites until stiff; gradually add apple pulp, sugar, and vanilla.
3. Serve with custard: Heat milk to boil, then add beaten yolks while stirring until thickened.
4. Sweeten and flavor the custard to taste.
