GOLDEN CREAM PIE

Instructions:

  1. Separate eggs while cold; let whites warm to room temperature.
  2. In a saucepan, combine orange juice and gelatin. Add 1/3 c. sugar, salt, and egg yolks; stir to blend.
  3. Cook over low heat, stirring constantly, until gelatin dissolves and mixture is hot but not boiling.
  4. Remove from heat and add Galliano, Cointreau, and orange peel. Refrigerate until slightly thickened (about 1 hour).
  5. Beat egg whites with cream of tartar and salt until soft peaks form. Gradually add sugar while beating.
  6. Fold thickened gelatin mixture into egg whites. Fold in half the whipped cream.
  7. Pour into pie crust and sprinkle toasted coconut around the edge.
  8. Refrigerate for several hours. Garnish with remaining whipped cream.
