CELERY WITH WINE

  1. Cut celery leaves for soup bouquets, scrape strings, and cut into pieces.
  2. Place celery in a kettle, cover with meat stock or water, add salt and sugar, and cook until tender (about 15 minutes).
  3. Heat butter, add flour, and blend well. Add wine to the mixture.
  4. Pour over cooked celery and bring to a boil.
