EGG FOO YONG

  1. Combine eggs, onion, green pepper, soy sauce, celery, and salt in a bowl.
  2. Chop bean sprouts slightly and add them to the mixture; mix well.
  3. Heat 1 inch of salad oil in a frying pan.
  4. Drop the egg mixture by large spoonfuls into hot oil.
  5. Cook until golden brown, turning once, then drain on absorbent paper (serves 6-8).
  6. Sauce:
  7. Drain all but 3 Tbsp. of fat from the pan.
  8. Blend in 3 Tbsp. flour.
  9. Add 2 c. water and cook over low heat until thickened.
