GERMAN APPLE PANCAKE

Instructions:

  1. Preheat oven to 500 degrees.
  2. Peel and slice the apple; fry in a small amount of butter until softened but not mushy.
  3. Place apple slices in an 8 or 9 inch pie pan.
  4. Mix milk, flour, sugar, salt, and eggs thoroughly in a blender or mixing bowl.
  5. Pour batter over apples and bake for 7-8 minutes.
  6. Remove from oven, dot with butter, and sprinkle with cinnamon and powdered sugar.
  7. Return to oven for a few minutes to melt butter.
  8. Sprinkle with lemon juice and serve (yields 2-4 servings).
